Greek cabbage Salad (Serves 4)
This recipe was adapted from Psisteria Restaurant, Lincolnwood, Illinois.
V2 pound finely sliced cabbage (green, red, or blend) 3 tablespoons diced fresh parsley 2-3 tablespoons extra-virgin olive oil juice of 1 freshly squeezed lemon l/i teaspoon sea salt
In a large glass or plastic bowl, toss the cabbage and parsley with a pair of salad tongs. Drizzle in the olive oil and toss the greens to spread the oil. Add the lemon juice, then the salt, and toss a little more. Allow the ingredients to set in the refrigerator for 1 to 4 hours before serving. |

There's actually a study, I think it's on the Harvard School of Public Health's web site right now, which talks about chemicals that are found in cabbage. If you eat the raw cabbage before eating the cooked cabbage, the raw chemicals will actually mitigate the effect of the cooked food cabbage. Anyway, I know we're running out of time. In another pot, steam the cabbage until it is slightly soft. After the cabbage cools, cut off the bottom, peel off the leaves, and place them in a baking dish one by one. Spoon a helping of turkey mixture onto each leaf and then roll it up. Sprinkle with flaxseed and bake for 15-20 minutes. Makes 8 servings.

2 cups sunflower sprouts 2 cups bean sprouts
2 cups whole walnuts 1/2 honey
3 cups sliced red cabbage 1 cup diced raw carrots

1/2 cup toasted sesame seeds
Coat walnuts with honey and place on a lightly greased cookie sheet. Bake in a preheated 375 degree oven for 20 minutes. In a large bowl, toss sprouts, red cabbage, carrots, nori and sesame seeds. Toss with dressing and top with walnuts before serving. |

Medicinal Parts: The medicinal parts of the plant are the fresh cabbage head and juice derived from the fresh leaves.
Flower and Fruit: The inflorescences have long-pedicled flowers. The flowers are large and have 4 erect, narrowly elliptoid sepals 6 to 12 mm long. The 4 petals are about twice as long as the calyx and are sulphur yellow. The margin broadens at the tip and narrows at the base to an equally long wedge-shaped funicle stem. The stamens are erect and close to the ovary. The central honey gland is almost erect. |
| Habitat: Wild cabbage was originally found in the Mediterranean region. Today it grows wild as far north as southern England and Helgoland, and cultivated varieties are found in temperate and damp climates worldwide.
