Indonesian Sprout Salad_
2 cups sunflower sprouts 2 cups bean sprouts
2 cups whole walnuts 1/2 honey
3 cups sliced red cabbage 1 cup diced raw carrots
1 cup sliced nori
1/2 cup toasted sesame seeds
Coat walnuts with honey and place on a lightly greased cookie sheet. Bake in a preheated 375 degree oven for 20 minutes. In a large bowl, toss sprouts, red cabbage, carrots, nori and sesame seeds. Toss with dressing and top with walnuts before serving. |

Using a food processor fitted with the slicing blade, place the sprouts in the tube and slice thin. (Alternatively, slice as thin as possible by hand or use a mandoline.)
Heat i tablespoon of the oil in a skillet or wok over medium-high heat. Add the nuts and cook for 5 minutes, until fragrant. Remove and reserve. Add 2 remaining tablespoons oil and the sprouts to the skillet; saute, stirring for 7 or 8 minutes, until browned.
Return the nuts to the pan and mix with the Brussels sprouts. Season with salt and pepper. Pour the sesame oil over just before serving. |

Gently mix the watercress and sprouts; toss with the dressing. Place equal portions of greens on two plates, then distribute half the nuts, avocado slices, and cheese on top of each and serve.
VARIATIONS
Eliminate the bean sprouts and substitute a head of butter lettuce, rinsed and torn into bite-size pieces. Mix the ingredients and top with 1/4 cup pomegranate seeds.

Cook spinach for a minute, just enough to wilt. Cook sprouts for two minutes and set aside in bowl. Fry eggs, leaving yolk a little runny.
Add 1 cup of cooked brown rice to each individual serving bowl. Place a layer of spinach on top of the rice. Arrange portions each of mushrooms, carrots, sprouts, squash, onions, and meat on top of spinach. Top off with a fried egg. Add desired amount of red bean paste and serve.
