• Combine ingredients in a bowl. Mix in water.
• Knead well. (Should have consistency of ear lobe and be slightly sticky.)
• Allow dough to rest at least 1 hour, or overnight.
• Shape into small balls.
• Roll into flat rounds (the thinner, the crispier).
• Heat a cast-iron skillet.
• Oil each chapati on both sides (optional), but do not oil pan.
