When there is doubt as to providing a sufficient amount, the diet of infants could be supplemented by feeding the infant whole grain cereals. MINERALS-CALCIUM Value.
The poly-unsaturated fats are found in soybean, corn, cottonseed, and other vegetable oils. This group of fats contains linoleic acid, a thin, yellow, oil compound consisting of eighteen parts carbon, 32 parts hydrogen and two parts oxygen. In stearic acid, found in saturated fatty acids, the amount of carbon (18) is the same as in oleic acid and linoleic acid; however, the hydrogen portion is thirty-six parts as compared with the 34 parts of oleic acid and the 32 parts of linoleic acid. As in the other acids, stearic acid contains only two parts of oxygen.
Individuals with excessively high blood cholesterol may usually reduce the cholesterol level by ingesting vegetable oils rich in linoleic acid. The more solid fats eaten, the more the need for linoleic acid. In addition to linoleic acid, there are two other fatty acids needed before cholesterol and saturated fats can be utilized, namely linolenic acid and arachic acid, a crystalline fatty compound contained in butter and other substances. Linolenic acid is a component of linseed and soybean oils.
