Fish oils are the worst in this regard, but the same is also true of all oils. This is one reason why I generally encourage you to focus on improving the balance of your fats, rather than adding extra oils, except as a temporary measure. This is described in more detail in chapter 8, but here is how it works in a nutshell: • When you avoid animal fat and keep vegetable oils to a bare minimum, your body makes less estrogen. • At the same time, high-fiber foods help your body eliminate excess estrogen more easily. Your estrogen levels will be both lower and more stable when the main sources of fat (animal products and cooking oils) are taken off the menu and, at the same time, generous amounts of fiber-rich vegetables and grains are in your routine.
Do not assume that your problem is genetic, however, until you have tested yourself by following a diet that avoids animal products completely and keeps vegetable oils to a bare minimum. After six to eight weeks, a cholesterol test will show whether you are improving. Even small deviations from a vegetarian diet can cause cholesterol levels to climb in many people. If your problem is genetic, avoiding cholesterol and fat in your diet is still a good idea. Evidence shows that consuming less cholesterol reduces your risk of heart problems, even if your blood cholesterol level does not decrease.
Even though vegetable oils are better than animal fat, they do contain some saturated fat, because all fats and oils are mixtures.
