A word of caution

On the other hand, ingesting high amounts of refined and altered vegetable oils (omega-6 group) can increase the severity of asthma. One consequence may be that these foods increase production of compounds that exacerbate mucous secretion and muscle contraction during asthma attack.
Vitamin C is especially important to the health of the lungs. It is the major antioxidant present in the lining of the airway surfaces.6 High intake and high blood levels of vitamin C have been shown to protect against the development of chronic respiratory symptoms in humans. |

Choose tuna packed in water and sardines canned without oil, unless it is sardine oil, noted on the label as sild. Added oils, such as soybean oil, can diminish the omega-3s. Also, draining oil from canned tuna washes away from IS to 25 percent of the omega-3s, whereas draining water off washes away only 3 percent.

Avoid soups: they are optional anyway, and tend to stimulate appetite. Use a few protein tablets, available at health food stores, if appetite presses you between meals. Choose a brand low in carbohydrate, high in protein. Experiment until you find one which is palatable—important because most of these tablets are chewable. |

Far more efficient than vegetable oils in lowering blood cholesterol is old-fashioned cod-liver oil, but the baby of today receives only the Vitamins A and D of that oil. I cite this not only because this deprivation may be harmful to infants, but because it emphasizes the fact that there is no such thing as a perfect vitamin supplement. The fault may lie in what we leave behind when we concentrate a natural factor. It may be that the synthesized vitamin lacks the helpful fellow-traveling trace substances which in nature accompany the natural vitamin. |
| Rotate your choices of vegetable oils, buying them in small bottles and keeping them in the refrigerator. Although I count good nutrition as cheaper than crisis medicine, be sure to keep an eye on prices: the less costly of two identical formulae should be chosen, of course, but only so long as you are not penalized with undesirable preservatives and dyes. The brands which omit such ingredients usually announce the fact on their labels.

| Basic dressing should be additive-free pure vegetable oils, varied as much as possible, with such added seasonings as you prefer.
3 squares of butter.
1 serving of oatmeal, whole-wheat, or other whole-grain cereal, additive-free, with 1 teaspoonful of undefatted wheat germ. Pancakes or waffles from good recipes—not commercial mixes—may be substituted. Whole or nonfat milk, added as you choose. A teaspoon or two of coarse miller's bran in the cereal will help to keep elimination normal.

| The soft margarines are preferable to the solid type, though either will, like the vegetable oils, create a continuing need for Vitamin E and other antioxidants. I have a lingering suspicion, which I've not yet been able to confirm, that some of these margarines are made from vegetable oil residues from the manufacture of Vitamin E concentrates. If so, they are obviously devoid of the vitamin, while increasing the need.
In general, it will be better to choose the "cold-pressed" oils which you will find in the health food stores as sources of unsaturated fat, rather than the margarines. |

In addition to adding to the risk of cardiovascular disease, the omega-6 polyunsaturated fats found in vegetable oils appear to stimulate tumor growth in animals. It's best to limit your intake to 10 percent or less of your total calorie intake.
Monounsaturated fats found in olive and canola oils, as well as avocados and nuts, are among the best documented of the heart-healthy fats available. They should constitute about half of your fat intake.
Whenever possible in recipes, substitute olive oil for other fats. Olive oil has centuries of history in the prevention of disease. |

| Let's begin by acknowledging that the vegetable oils and the margarines made from them are far from being the natural fats of the seeds from which they originated. A typical method of processing is to crush the seed under great pressure, which extracts the oil—at this stage, it is a dark substance with uninviting taste and odor. This will not please the housewife, who for esoteric reasons must be able to read the oil label from the back of the bottle, demanding a clear, transparent product which, needless to say, must taste better than the source material does. |

Ffydrogenated vegetable oils, including vegetable shortenings and margarine, are also heat-processed; in addition, their molecular structure has been distorted in other ways, so they especially stress the immune system.
Individuals with cancer and other serious immune deficiency conditions do better when all extracted oils, fats, and oil-rich products such as nuts and seeds are avoided or greatly restricted. C True, heart authorities first encouraged the widespread use of such vegetable oils to lower blood cholesterol, not suspecting the oils could have detrimental effects on other aspects of health, such as fostering inflammatory diseases, lowering immunity and promoting cancer. Such omega-6 oils are well-documented villains in augmenting cancer incidence, cancer spread and deaths in laboratory animals.
