To buy good onions, select only those that are firm bulbs with clean papery skins, avoiding any that are soft, wet, or sprouting. They should be stored in a dry, cool, well-ventilated place. When sliced, wrap them in plastic and refrigerate. Whole onions should keep for almost a month. There is nothing more foul-smelling than rotting onions!
Green onions (also called spring onions or scallions) are often used in Asian cooking. Wilder than many dry onions, they are also served raw in relish plates and salads. |

Avoid dark spotted or sprouting bulbs. To maintain good health, try to eat the equivalent of one-half to one cup of chopped onions every day.
Raw onions contain higher amounts of the disease-fighting chemicals, but cooked onions are also healthful.

| Onions
Onions are dormant after harvest and so can be stored without sprouting for, in the case of sharp, yellow onions, 2 to 3 months. Sweet, moist, and/or red onions have a shorter shelf life and may be stored from 2 to 4 weeks. Hang onions in an aerated basket or bag in a cool (ideally, 30 to 40 degrees), dry, well-ventilated place. Do not store onions near potatoes, as onions absorb moisture, which causes potatoes to sprout and rot. Do not refrigerate onions. Once cut, onions oxidize and quickly lose their flavor.

Most seeds have a strong outer coating to preserve their precious nucleus for sprouting and growth. The yangness of the outer coat of some seeds is so protective and strong that certain seeds found in the burial chambers of ancient Egyptians have been able to sprout after thousands of years. Yet when this strong outer yang seed coat is subjected to yin moisture, its inner yin contents begin to germinate and display such strength as to literally break open the outer yang seed coat. |

RHUBARB
(Rheum rhaponticum)
Tightly furled, scarlet, primitive-looking rhubarb sprouting up out of the garden heralds spring—and with it, the springtime ritual of strawberry-rhubarb pie. Rhubarb is not ready to eat until its large reddish celerylike stalks are a foot in length and its forest green leaves are the size of elephant ears. Rhubarb root is a prized medicinal herb, but it's the tart, astringent stalk that we sweeten and use as a spring dessert. This old-fashioned food remains a local vegetable that is available only when it's in season. |
| People with delicate digestion may require a second step of partially sprouting beans (see Sprouts). This enables the beans' activated enzymes to more thoroughly "pre-digest" the complex carbohydrates. Sprout until the nascent sprouts just emerge and then cook as normal. I do not recommend the shortcut soaking method of boiling beans before soaking them because this prematurely kills their enzymes. Once soaked, strain, and rinse well. Next, add fresh water to cover the beans by two inches and boil furiously, without a lid, for ten minutes. |

The body tries to get blood to the area by actually sprouting new blood vessels to bypass the clogged ones. Unfortunately, they grow over the retina, causing blindness. Laser surgery and vitrectomy (where blood that has leaked into the eyeball is "vacuumed" out) are the only medical treatments available for diabetic retinopathy, and by the time these are needed, the disease is advanced. Good nutrition and the right supplements can do a great deal to keep things from going that far.

Buckwheat Cream
There are two ways to make buckwheat cream: by using buckwheat flour or by using whole buckwheat groats that are then ground in a flour mill. 1) Heat 1 teaspoon of corn oil in a skillet without burning it.
