Sprouted Hummus Spread
4 stalks celery, chopped 4 cloves garlic, minced
2 cups dried chickpeas
1 tomato, chopped

1 to 2 tablespoons tahini Juice of 1 lemon 1 teaspoon parsley, finely chopped 1 to 2 tablespoons olive oil
Pinch cayenne pepper (optional)
1 teaspoon unrefined salt (or crumbled, dried organic seaweed)
Using a sprouting jar, soak the beans overnight. Rinse daily, and allow the beans to sprout for 1 to 2 days.
When sprouted, mix beans with all other ingredients and place in food processor. Blend until you achieve the consistency you like. |

There are a few exceptions: seeds, nuts, grains, and beans have enzyme inhibitors which must be deactivated by soaking, cooking, or sprouting. For individuals who are overheated (too hot and dry), completely sprouting the seeds may be appropriate. Broccoli sprouts are immature broccoli plants that are produced by sprouting broccoli seeds. In general, sprouts resemble the food of their origin in nutritive value but contain increased amounts of vitamins A and C, less carbohydrate, and more protein than the mature product. Soaking the nuts and seeds also influences their effect upon the doshas. The more fat a nut has, the more likely it will aggravate pitta and kapha. Some nuts that do this are Brazil, macadamia, walnuts, and pistachios. Other seeds are warming, such as chia and sesame seeds, and may aggravate pitta if eaten in excess. Chia seeds are particularly heating and will usually aggravate pitta. Soaked seeds and nuts, however, are less concentrated, less heavy, less oily, less sweet, and less dry. |
