Sprouts
In my classification, there are two different types of sprouts: seed/legume sprouts and green sprouts,
Seed/legume sprouts fall into the first stage of sprouting; these types of sprouts are protein-dominant foods. As the sprout matures, it begins to form green leaves of one type or another; it has then become a green sprout and falls into the green-leafy vegetable category. So, for example, sprouted wheat is a seed sprout, but as it grows its green blades, and turns into wheatgrass, it becomes a green sp'out. |

Broccoli (more accurately known as sprouting broccoli and calabrese broccoli - see B. oleracea var. italica) is similar but the heads are partly or completely subdivided into separate small units. PHYTATES AND TRADITION

FOOD IRRADIATION
Food irradiation is used to extend the shelf life of our foods by eliminating or controlling pests, sprouting, and rapid ripening. This is done by exposing the foods to certain levels of gamma radiation, the shortest wavelength of the light wave spectrum of solar energy. Not only does this process not work, it is highly dangerous for the individuals performing this process, just as it is also dangerous to those consuming the irradiated foods.

Soybean milk processing plants are sprouting up in places like Kenya. Even China, where soy really is a poverty food and whose people want more meat, not tofu, has opted to build western-style soy factories, rather than put grazing animals on grasslands that cannot be used for growing crops.

Arachidonic acid increases the ability of a brain growth chemical (Nerve Growth factor or NGF) to enhance the sprouting of dendrites, important connecting elements in the brain. Most of the fruits and vegetables in our supermarkets today do not contain the complete range of nutrients, compared to those of earlier times. Because of overfarming, soils have become depleted of many trace minerals that are required by our bodies for complete health. If we are not able to consume a diet of organically grown food, we can avoid or replenish mineral deficiencies in our bodies by using supplements. Amaranth flour contains no gluten and must therefore be combined with wheat when a rising loaf of bread is desired. Mix 25 percent amaranth flour with 75 percent wheat or other gluten-containing flour when making yeast breads. Baked goods that do not require gluten, such as biscuits, muffins, pancakes, pasta, and flatbreads, can be made using 100 percent amaranth flour. |

Science has now shown us that short-term germination increases the strength of soy's antinutrient fractions; long-term sprouting plus fermentation will decrease and nearly eliminate them (see Chapters 15-20). Either way, the plant estrogens remain present. No wonder soy sprouts are mentioned in historical accounts as useful, sometime-pharmaceuticals, not as daily food.15
