Because Stage Three eliminates all animal products, it is natural for one to begin to eat a lot more grains, beans, fruits, vegetables, raw nuts and seeds, sea vegetables, soaked and sprouted grains, legumes, and raw dairy. Most of these foods are high in fiber, whereas all flesh foods, dairy, and eggs have essentially no fiber. A vegetarian diet increases all types of dietary fiber and consequentiy produces a cleaner, less toxic bowel condition. On a healthy vegetarian diet there is usually no longer a need to supplement one's diet with oat or wheat bran fiber to assist bowel regularity.

I prefer to add sprouted wheat grass, barley, and other sprouted grains, all of which are high in vitamins and enzymes. Foods containing fats have a lubricating effect on the mucous membrane lining of the colon walls. Fat-soluble vitamins and unsaturated fatty acids are important to the gastrointestinal tract. Vitamin A complex, B complex, E complex, and unsaturated fatty acids (especially omega-3 fatty acids) are all beneficial. Foods rich in these fat-associated nutrients are often a source of mucilage (gum-like gels).

For these reasons, raw food enthusiasts endorse eating anything uncooked that you can eat that way: fruits, vegetables, seeds, nuts, sprouted seeds and legumes, sprouted grains, milk products, and fish (sushi or sashimi). Fermented foods and sprouts greatly aid in the process of digestion and assimilation, and for this reason are often included in raw food and strict vegetarian diets. These include yogurt, unpasteurized miso, unpasteurized sauerkraut, unpasteurized tamari/shoyu, pickled vegetables, sprouts, and traditionally fermented sourdough bread.

Proportions of foods in the daily diet: 35% sprouted grains, legumes, and seeds; 45% vegetables and fruits and their juices; 10% cooked grain; 10% other recommended foods. Actions: This diet eliminates disease-producing toxins more quickly than DIET A and is appropriate for those who show strength, strong pulses, and have neither loose stools nor signs of coldness (chills, aversion to cold, pallor, and great attraction to warmth).

Those with the highest amounts of enzymes include apples, papayas, pineapples, melons, sprouted grains and beans, fermented foods (like tamari, tempeh, yogurt, buttermilk, pickles, and olives), brewed beer, wine, the fresh green shoots of grasses (barley and wheat grass), and various salt- and freshwater green and blue-green algae. Cooked foods do not contain active enzymes. The pasteurization process, heating foods to destroy microorganisms, also destroys enzymes in beer, milk, and other food products.

Aflatoxins can also be found in moldy nuts and sprouted grains. Safe Food choices þ You can probably play it safest by sticking to the large, national brands of peanut butter, which are apt to have the best quality control, and which contained the lowest aflatoxin levels in Consumer Reports' testing in 1990. þ Popcorn and sweet corn tend to resist mold and be free of aflatoxins. But aflatoxins can be found in peanuts, pecans, walnuts, almonds, Brazil nuts, and pistachios. When you shell or eat nuts, look at each one carefully, and throw out any that are moldy, discolored, or shriveled.
And if you find mold on sprouted grains that you purchase or sprout yourself, throw them out. CARCINOGENS AU NATUREL? Forget synthetic pesticides for a minute. What about the "natural" pesticides in our fruit and vegetables? It appears that many plants contain substances that repel and poison pests. Should you be worrying more about these pesticides that Mother Nature has created than about the chemicals concocted in pesticide manufacturers' laboratories? Bruce Ames, Ph.D.

Fruit intake in winter is usually also at a minimum. sprouted grains, seeds, and beans can bring a few more fresh and vital foods into the winter diet. Mr. Rohe uses the term "omnivarian" to describe this new diet, which is primarily vegetable based, in contrast to the more typical carnivorous/ omnivorous diet. I am currendy eating this omnivarian diet, with small amounts of dairy products, mainly as yogurt, butter, or cheese (less than 5 percent of the diet), and a bit of the animal meats, solely as fresh fish and organic poultry, not more than three or four times per week.
Sprouted beans and seeds are often a very nutritious component of the diet. sprouted grains can be made into breads and wafers. Raw (unpasteurized) milk products may be used. Water, fresh juices, and sun teas are the main drinks in this diet. All stimulants, chemicals, and alcoholic beverages are avoided. Though this diet can be a very healthy and adventurous one, I believe that unless it is very astutely balanced, it is not a good one for very long.

Raw-food vegetarians restrict their diet to only sprouted beans and sprouted grains in addition to raw vegetables and nuts. This most extreme diet excludes added fats, oils, salt, and all other flavorings. ?Vegans, or strict vegetarians, consume only food generated by plants. These foods include vegetables, fruits, grains, beans, and nuts. ?Lactovegetarians consume plant-based foods plus dairy products, including milk, butter, and cheese. ?Lacto-ovovegetarians add eggs to the lactovegetarian diet.

Because these sprouted grains depend a lot on their enzyme activity, the most effective way is to grind the dried sprout to a fine powder and simply take as a pill or powder mixed with water. Contraindications: Sprouted rice should not be used by nursing mothers, because it can reduce milk flow, or by those without symptoms of food stagnation.
