Those who have access to ripe tamarinds may want to substitute the two parts of cream of tartar with four parts of the fresh fruit juice. This should be done only at the time any baking is intended. Combine the one part each of baking soda and cornstarch first, then slowly stir in the tamarind juice, mixing everything thoroughly. Needed: 2 cups chopped, peeled potatoes; 2 cups chopped, peeled acorn squash; 1/2 cup chopped onion; 1-1/2 tsp. snipped fresh marjoram or 1/2 tsp. crushed, dried marjoram; 3/4 tsp. instant chicken bouillon granules; 1 minced clove garlic; 2 cups milk.
In a large saucepan combine spuds, squash, onion, marjoram, bouillon granules, garlic, 1 cup water and 1/8 tsp. pepper. Bring to boiling. |

This is best done by eating more fresh fruit and vegetables. These foods are richest in potassium. Salt substitutes are available that contain potassium chloride and usually some other ingredients that try to mask the taste of this substance (bitter and metallic). A good half-way substitute is Morton's "Lite Salt," which is essentially one-half potassium chloride and one-half sodium chloride. Many can't distinguish it from regular salt.
Those at particular risk of potassium deficiency are diuretic users and they certainly should subscribe to the above dietary principles. |
