Peel the butternut squash. Cut it in half and remove and discard the seeds. Place the squash cut-side down in a baking pan with W of water. Bake for 40 minutes at 400 degrees. When squash is cool enough to handle, cut it into bite-sized pieces. Place in a medium mixing bowl. Rinse arugula carefully to get all the dirt off. Tear off the stems and discard.
